1/2 cup pine nuts, or less
1/4 cup extra-virgin olive oil
3-4 cloves garlic, sliced
1 head of broccoli (about 1-1/2 lbs.) trimmed into flowerets
1 bag (10 oz. ) matchstick carrots
1/2 tsp salt
1/2 tsp dried Italian Seasoning (or seasoning of choice)
1-2 tbsp. lemon juice
1/2 tsp. pepper

1. In large skillet, toast pine nuts over medium heat, stirring frequently, about 4 mins. or until brown. Remove pine nuts to small bowl. Set aside.

2. In same skillet, heat oil over medium heat. Add garlic, saute' about 1 minute or until garlic starts to color. Add broccoli, carrots, salt & Italian seasoning. Increase heat to medium-high; saute' for 12 -15 mins. or until vegetables are cooked but still slightly crisp. (If vegetables start to stick, add a few tbsp. water).

3. To serve, place vegetables in a serving bowl; toss with lemon juice, black pepper & pine nuts.
