1 lb. baby portabello mushrooms, stems removed and saved
½ lb. ground sausage, hot or mild
3 oz. cream cheese, plain or jalapeno flavor
3 TBSP grated cheddar

Preheat oven to 375º.

Place cleaned mushroom caps in a greased 15x10-inch pan or on a parchment paper lined cookie sheet. Bake for 10 minutes. Remove from oven and drain liquid.

Pulse clean mushroom stems in food processor and set aside in bowl.

Brown the ground sausage and drain any fat/oil.

Combine cream cheese, cheddar, mushroom stems, and sausage.

Spoon mixture into the baked mushroom caps. Bake additional 8-10 minutes or until browned.
