4 chicken breasts
9 oz. crushed cheez-it crackers
1 jar Kraft Old English Cheese spread
1 4 oz. can diced green chiles
1 package taco seasoning mix
1/2 c. butter or margarine

Directions:
Directions:
Mix crushed crackers with 1 pkg. taco seasoning mix. Set aside.
Heat cheese spread in microwave and add diced chiles. Set aside. Pound chicken breasts to 1/4 in. thick; place 1/4 cheese mixture in the center of each breast and roll up. Dip in butter and roll in cracker mix. Place chicken breasts in a glass pie plate. Add remaining butter and crackers to the top of the chicken breasts and cover with waxed paper. Place a dinner plate over the waxed paper and seal with plastic wrap. Cook in microwave for approximately 18 minutes (until chicken juices run clear). Serve with Spanish rice if desired.
