1 cup corn meal
1/2 cup AP Flour
1/2 baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 egg
1 1/4 cup buttermilk
1 tablespoon bacon grease
2 tablespoon butter

Directions:
Directions:
Stir together the meal, flour, baking powder, salt and baking soda.
In a separate bowl mix together the egg, buttermilk and bacon grease then stir into dry ingredients until they are just moistened. Melt butter in a skillet on medium high heat. When hot, pour in 1/4 cup of batter for each cake. Cook 3 to 4 minutes or until the edges are crispy and bubbles form on the top. Turn and cook other side. Serve hot.
