1 cup milk, scalded
2 Tbs butter or margarine
2 tsp. salt
1/2 cup molasses
1/2 cup maple syrup
1 cup cold water
1/4 cup warm water
1 pkg. active dry yeast
1 1/2 c. old-fashioned oats, uncooked
6 cups flour, divided
1 egg white
1 Tbs. water

Grease two 9 x 5 loaf pans. Mix together milk, butter, salt, molasses and maple syrup Stir in cold water; cool to lukewarm. Pour warm water into a large bowl. Add yeast and stir until dissolved. Add cooled milk mixture, oats and 4 cups flour to yeast mixture. Beat with electric mixer on medium speed. By hand, stir in remaining 2 cups flour to make a medium-firm dough. Turn dough out onto a lightly floured surface and knead until smooth, about 5 - 8 minutes, adding additional flour to prevent sticking. Shape into a ball. Grease a large bowl and place dough in it, turning to grease top. Cover wit clean kitchen towel. Let rise in a warm, draft-free place until doubled in bulk, about 1 1/2 hours. Punch down dough and knead lightly, 1 - 2 minutes. With lightly floured hands, divide dough in half. Shape into 2 loaves and place in loaf pans. Cover lightly with kitchen towel; let rise in warm, draft-free place until almost doubled in bulk, about 45 minutes. Preheat oven to 375º. Mix together egg white and water. Brush on loaves. Sprinkle tops of loaves with oats. Bake 50 minutes or until lightly browned. Cool. Slice into 16 slices.
