4 - 5 cups bread flour
2 tsp. salt
2 pkgs. dry yeast
1 cup water
1/2 cup honey
1/4 cup butter
8 oz (1 cup) cream style cottage cheese
2 eggs
1 cup whole wheat flour
1/2 cup rolled oats
1 cup chopped nuts (optional)

Using 2 Tbsp. shortening per pan, greast two 8 x 4 inch or 9 x 5 inch loaf pans. Lightly spoon flour into measuring cup and level off. In large bowl combine 2 cups bread flour, salt, and yeast and blend well.

In saucepan heat water, honey, butter, cottage cheese until very warm (120 - 130º).. Butter does not need to melt completely. Add the warm liquid and eggs to flour mix. Blend at low speed until moistened. Beat 3 minutes at medium speed. By hand, stir in whole what flour oats and nuts, plus enough bread flour to form a soft dough.

On floured surface, knead dough 10 minutes or until dough is smooth and elastic. Place dough in greased bowl. Cover and let rise 1 hour until double. Punch down and divide into 2 parts. Let rest 15 minutes. Shape into 2 loaves Put in pans. Cover and let rise about 1 hour. Bake at 375º for 35 to 40 minutes.
