1/4 salt
1/2 lb salted butter
8oz cream cheese
1 egg, beaten
11oz dried apricots
1 tbsp sugar

Confectioner's sugar

Directions:
Directions:
Sift flour and salt into mixing bowl. Cut in butter and cream cheese with pastry blender until the particles are the size of a pea. Add the beaten egg, stirring only until the ingredients are mixed. Press together into a loaf shape. Wrap in plastic and refrigerate overnight. To prepare filling, place apricots in a saucepan with 1 tbsp sugar. Add water to barely cover apricots. Bring to a boil then turn heat down to low and cook into until soft, 15-20 minutes. Pour off excess and mash like potatoes. To make the cookies cut off a 1/2 inch slice from the loaf of dough to the refrigerator. On a dry wooden board covered with confectioners sugar roll,out the dough until very thin, about1/4 inch thick. Cut dough in 2 inch squares. Place a small amount of the apricot filling in the middle of each square of dough. Roll the dough around the filling sealing the edges with your fingers. Place seam side down on baking sheet . Repeat with remains dough and filling. Bake at 350º for 12-13 minutes. Sprinkle with confectioners sugar before serving.
