6 to 8 tart apples, peeled, cored and thinly sliced (6 cups)
3/4 - 1 c. sugar
2 T. flour
1/2 - 1 t. ground cinnamon
Dash ground nutmeg
Dash salt

3 T. butter

Directions:
Directions:
If apples lack tartness, sprinkle with about 1 T lemon juice.

Combine sugar, flour, cinnamon, nutmeg and salt.

Mix with apples.

Put in unbaked pie shell -- cut butter in small pieces and cover mixture.
Put on top crust. Seal edges and cut slits in top crust.

Sprinkle with sugar.

Bake at 400 degrees for 50 minutes.

After we retired and started making trips to the Orchard, with a bushel of apples, Eric and I would spend a morning making pies. He would use the apple peeler and corer and do that part and I would put them together. We would make about a dozen (we would not bake them - only construct them) and put them in the freezer. He loved getting one out of the freezer in the middle of the winter and baking it -- fresh apple pie for dinner -- good memories.
