Clam juice
Flour

Salad oil
Butter or margarine

Pound chicken breasts skin removed until thin between 2 pieces of wax paper. Remove any loose flesh. Pour clam juice into a glass dish arrange chicken in layers pour more juice over chicken. Lightly cover with plastic wrap. Let stand in refrigerator at least 36 hours, turn occasionally. To cook, drain chicken, roll in flour then beaten egg then again flour. Brown on each side in hot oil and butter. Tastes like abalone.

Gen was my mom's best friend, they travelled all over the world together, my dad didn't fly. She sent this recipe to my mom on March 26, 1986, there was a note with the recipe "red bell peppers are cheaper in the month of October. And I love that this recipe does not include bell peppers. #friendship talk
