DOUGH
1 c. butter (1 stick), softened
6 oz. cream cheese, softened
2 c. flour

PECAN FILLING
2 eggs
1 ½ c. brown sugar
2 TBSP butter, melted
2 tsp. vanilla extract
1 c. pecans, chopped

Directions:
Directions:
DOUGH: Beat together softened butter and softened cream cheese. Slowly mix in flour. Cover and chill in the refrigerator for 1 hour.

FILLING: Beat together eggs, packed brown sugar, melted butter, and vanilla extract. Stir in chopped pecans.

Preheat oven to 325º.

ASSEMBLY: Roll the dough into 1-inch balls and press the dough into mini muffin pans to form the crust. Fill each mini pie crust with the filling until nearly full.

BAKING: Bake 25-30 minutes.
