1 lb can of almond paste
1 1/2 cup sugar
3 large egg whites
2 cups pine nuts
1 cup powdered sugar

Directions:
Preheat oven to 350º. Line 2 cookie sheets with parchment paper.
Crumble alond paste into mixing bowl and beat until crumbled fine. Sprinkle the sugar over the alone paste while continuing to beat until the alone paste and sugar are blended. Beat in egg whites, one at a time and continue beating until dough is smooth. Spread pine nuts on a plate. Roll 1 tablespoon of dough at a time into a ball and roll it into the pine nuts coating all sides. Transfer each to the parchment covered cookie sheet. Press firmly to slightly flatten and help pine nuts adhere to dough/ Bake until lightly browned and springy (about 15 minutes). Cool completely on wire racks and dust with powdered sugar before serving.
