1-2 TBSP olive oil
1-2 cloves garlic, minced
½-1 onion, diced
2-3 c. chicken broth
1 (9-oz.) package refrigerated/fresh cheese tortellini
½-1 tsp. dried oregano
salt and freshly ground black pepper, to taste
3 c. baby spinach, chopped
2 TBSP Parmesan
juice from 1 lemon
¾ c coconut milk
1-4 TBSP tomato paste (1-2 if using diced tomatoes and 3-4 if not using them)
1 (14.5-oz.) can petite diced tomatoes, undrained, optional
1-1½ lbs. ground turkey (or beef or chicken), optional

Directions:

Heat olive oil in a large stockpot over medium heat. Add onion stirring frequently until translucent, about 2-3 minutes. If using ground meat add to onions and begin browning. Add in minced garlic. If not using ground meat, add garlic to the onions and cook for 1-2 minutes. Add in salt, pepper, and oregano.

Add in chicken broth (and diced tomatoes, if using) along with tomato paste. Bring to a boil. Reduce heat and simmer until tortellini is cooked through, about 3-6 minutes. Remove from heat.

Stir in coconut milk, 2-3 handfuls of spinach and juice of 1 lemon. Serve immediately, garnished with Parmesan.
