1 lb. ground pork
1 lb. ground beef (85%+ or use ground sirloin)
3 large eggs
⅓ c. Romano (or Romano/Parmesan blend) cheese
3 slices white or wheat bread (run bread under water and wring water from bread)
Note: If you don't want to use bread, you can substitute for ¾ c. Italian bread crumbs with a few tablespoons of water
3 cloves of minced garlic (or use garlic salt or garlic powder to taste)
3 TBSP parsley flakes
salt (if you didn't use garlic salt already)
pepper

Mix together all ingredients in a large bowl. Form 1 meatball and bake at 400º for 5-10 minutes, until cooked through. Alternatively, you can fry meatball on stove in canola oil. Taste meatball. If seasoning is to your liking, form all meatballs and fry or bake as desired.

For Great Grandma soft and yummy meatballs I recommend you choose to use the 2 slices white or wheat bread (run bread under water and wring water from bread) as opposed to the bread crumb option. Frying is a great choice if you plan to add meatballs to sauce so you can also add a bit of the used oil into sauce for extra flavor. Note that you want to use a lean ground beef that is 85/15 or better such as ground sirloin mixed with a fatty meat for flavor and softness. If only lean meat is used, meatballs will be firmer and less tasty.
