1 can (28 ounces) either Diced or Whole Stewed Tomatoes
about 3/4 inch - 1 inch slice of Velveta Cheese (from large Velveta loaf)
5 egg whites

Directions:
Directions:
Heat tomatoes in sauce pan
Add Velvetta cheese (cut into small pieces)
Cook over low heat until cheese completely melted
Beat 5 egg whites in bowl and add to mixture.
Cook, while stirring, until egg whites are cooked


Serve over crackers (My mother, Virgie Hawkins, always served with Saltine Crackers.)

My mother always used whole stewed tomatoes and would "squish" them with her hands into smaller pieces (but that was before "diced" tomatoes).

The only cheese she ever used was Velveta but I suppose one could experiment if they had another cheese preference.
