3 cups flour
2 tsp cinnamon
1 tsp nutmeg
1 tsp baking soda
1/4 tsp baking powder
3 eggs
1 cup oil
2 1/4 cups sugar
3 tsp vanilla
2 cups grated zucchini, liquid squeezed out
1 cup nuts

Directions:

Preheat oven to 350º. Grease 2 loaf pans, 8x4. Sift dry ingredients (but not the sugar). In a separate bowl beat eggs, oil, sugar, and vanilla. Beat in the dry ingredients. Add the zucchini and nuts, mix well by hand. Pour ingredients into pans and bake for 45 mins to 1 hour or until toothpick inserted in center comes out clean.
BTW, this is yet another of those bread recipes that underestimate the time it will take for the bread to be baked through...At one hour, the bread was still uncooked in the middle. Maybe 1 hour and 15 minutes? I'll get back to you on that...
Cool in pans on rack 10 minutes, then remove from pans and serve warm or cold.
