1 package of 15 beans
Ham hock
2 tablespoons salt
1 large onion, chopped
1 can tomatoes
1 can Rotel tomatoes, chopped
1 teaspoon chili power
Juice of 1 lemon
1 clove garlic, minced
Salt and pepper to taste
Cubed raw boneless, skinless chicken breasts
Link sausage, sliced

Wash beans well. Place in pan. Cover with water and 2 tablespoons salt. Soak overnight. In the morning, drain. Add 2 quarts water. Add ham or ham hocks, hog jowl, etc. Bring to a boil. Simmer slowly 2 1/2-3 hours.
Add onion, tomatoes, Rotel, chili powder, lemon juice, and garlic. Add chicken and sausage. Salt and pepper to taste.
Simmer 30 minutes.
Serve with crackers and green salad. Serves 12-14. Great as a leftover the next day.
(It will not hurt if you simmer more than 2 1/2 - 3 hours or if you simmer longer after adding the meat.)
You may also add chopped celery, if you like. Before serving you may also add 1/2 cup red wine and 1/2 cup chopped parsley. I usually do not do this, but it sounds mighty good.

Suggested light fruit dessert: In a blender combine 2 bananas, juice of 2 lemons and 2 oranges, 2 eggs, 2 cups water and 1 cup sugar. Partially freeze in a flat pan. Blend again until frothy and refreeze until solid. A nice banana ice!
(I have never made this banana ice. It was a suggestion on the French Market Soup Mix
that Jane Brock sold at Everyday Gourmet. I used to buy that mix, but I found that I
could produce a good bean soup without paying the $5 for the mixture of seasonings.)
