4 cans (16-oz) Great Northern Beans
5 chicken breasts cooked and chopped
6 cups chicken stock
1 ¼ medium onions, chopped
4 cloves garlic, minced
1 tablespoon olive oil
2 cans (4 oz.) chopped mild green chilies
2 teaspoons ground cumin
1 1/2 teaspoons dried oregano
1/4 teaspoon ground red (cayenne) pepper
4 cups grated Monterey Jack and Colby cheese (do not substitute)
Sour cream

Directions:

Heat oil in large heavy pot over medium-high heat. Add onions, saute until translucent, about 10 minutes. Stir in garlic, then chilies, cumin, oregano and cayenne pepper; saute about 2-5 minutes.
Add undrained beans and chicken stock; bring to a boil, then reduce heat to simmer.
(Chili can be prepared 1 day ahead to this point. Cover and refrigerate. Bring to a
simmer before continuing.)
Add chicken and then 2 cups of cheese (slowly while stirring); stir until cheese melts. Season to taste with salt and black pepper.
Ladle chili into bowls, serve with remaining 2 cups of cheese and sour cream.
