2 cups raw wild rice ( Uncle Ben’s Long grain & wild rice, if you prefer)
4 cups chicken broth
6 chicken breasts
1/2 cup seedless raisins
1/2 cup orange juice
3 tablespoons flour
1/2 teaspoon paprika
1/4 teaspoon salt
dash of pepper
1 1/2 cups light cream

Rice: Wash 2 cups raw wild rice well in cold water. Add 4 cups chicken broth, cover and bring to boil. Remove cover and simmer stirring occasionally for 45 minutes or until rice is tender and liquid is absorbed. (Or follow instruction on Uncle Ben’s rice)
Chicken: Meanwhile brown 6 chicken breasts on both sides in butter. Cover. Cook over low heat for 30 to 40 minutes, until tender.
Sauce: Combine 1/2 cups seedless raisins and 1/2 cup orange juice. Bring to a boil; simmer 5 minutes. Set raisins aside. Remove chicken from pan. Pour off all but 3 tablespoons of the butter. Stir in 3 tablespoons flour, 1/2 teaspoon paprika, 1/4 teaspoon salt, and a dash of pepper. Add 1 1/2 cups light cream. Cook over low heat, stirring constantly until smooth and thick. Stir in raisin mixture.
Arrange 6 beds of cooked rice in shallow baking dish. Place chicken breast on each. Top with sauce. Bake at 350 degrees for 10 minutes.
