2 cups red beans
1 onion, diced
2 cloves garlic
2 teaspoons seasoning salt
Bay leaf
Pinch of sugar
Red pepper to taste
Ham hocks
Large link sausage
Cooked rice

Directions:
Directions:
Wash beans, soak overnight and drain. Cover beans and all ingredients with cold water. Bring to a boil, reduce heat and simmer until done. Serve over rice.
Large link smoked sausage, added the last 30 minutes gives delicious seasoning and makes a complete meal with hot fluffy rice and tossed salad.

This recipe came from Cotton Country Collection. Polly Simpkins told me about it years ago, and this is the one that I always use. I always add the sausage.
