1 ½ lbs. Skinless Chicken Thighs

½ tsp. Ground Cumin

½ tsp. garlic powder

½ tsp. salt

¼ tsp. smoked paprika

1-16oz. jar Mild Salsa

1-15oz. can Black Beans, drained

1 cup Sweet Corn, drained

1/3 cup Cilantro Leaves, chopped

1 tbsp. lime juice

1/2 cup shredded cheddar cheese

1/4 cup Velveeta cheese

Directions:
Directions:
Place chicken thighs in crockpot. Sprinkle cumin, garlic powder, salt and smoked paprika over thighs.
.Add salsa, black beans, corn, cilantro and lime juice. Lightly stir to combine, keeping thighs at the bottom of the crockpot.
Cook on low for 4 hours. Remove chicken, shred with a fork and return to crock pot. Stir in cheese. Serve on its own or as filling for burritos or tacos.
