3 cups corn bread mix (3 6 oz pkgs of cornbread)
2.5 cups milk
1/2 cup oil
3 beaten eggs
2 Tablespoons sugar (I just use about 1 tsp.)
1/2 cups chopped jalapenos
1.5 cups shredded cheddar
l chopped onion ( I usually use onion powder)
1 small can of cream style corn

Mix all ingredients together. Bake in a greased 9x13 at 425 degrees til done (25-35 minutes or so)

This is a family favorite. All the grands seem to love this as well! Great with soups - almost a meal in itself. This is Motsie's Mexican cornbread recipe. I almost always fix this when I fix a big pot of Vegetable Beef Soup! So good! In fact, I think I will go make some now!
