8 cups Oats
1 qt almond milk
1/2 c coconut oil
3/4 c brown sugar
1 T vanilla

1 c. coconut
1 ½ cup seeds pepita / sunflower/ sesame seeds/ wheat germ
2 to 3 c. chopped walnuts/ pecans/ or cashews (or any nut you like)


1 to 2 c. crasins, mangos or other dry fruits

In large bowl combine oats, some of the sweetener, and the liquids so that the oats are moist. The mixture can be microwaved at this point to let the oats soak up the liquid.

Add the rest of the brown sugar, wheat germ, coconut, sesame seeds.
MIx well. Press into 2 large shallow baking pans using a silpat or parchment paper.

Heat in 325 degree oven 1 hour or more. Check often and turn pans if necessary until lightly toasted. Crumble into pieces
Store in tightly sealed container. May be frozen. Makes about 14 cups.

Congratulate yourself if the mixture is lightly browned and crispy. If some is slightly burnt, just say "this is just the way Connie made it!"
