24 oz diced fresh tomatoes (blanched, peeled, diced...and I throw the diced tomatoes in a colander to drain excess juice off)

3 jalapenos (or to taste)

1 lg yellow onion

1/8 cup white vinegar, or even better, pickled juice off of pickled jalapenos (start with less, you can always add, this is already half of what the original recipe called for on food.com)

1 tsp. salt

1 TBSP dried onion flakes

1/2 tsp. garlic powder

1 tsp. chili powder, however, I used North African Harissa seasoning, has much better flavor; brand is Spice Islands)

I also added smoked paprika...YUM!

Cook all down, put in hot jars and can 'em up! The original recipe fromwww.food.com/recipe/perfect-pace-picante-sauce-225582 was made with canned tomatoes and tomato sauce....but I modified with just diced fresh tomatoes, using my dicer that Mom got us all for Christmas several years back....makes for a perfect texture!

For one gallon of diced and drained fresh tomatoes,, for low sodium, I used 2 tsp. of canning salt and 3 tsp. of Mexican salt from Mexico....delish!
