CRUST:
• 1 – 6oz. pkg. NABISCO Zwieback, finely rolled (2 cups crumbs)
• 2 T. sugar
• ½ tsp. ground cinnamon
• 1/3 c. softened butter
FILLING:
• 1 c. heavy cream
• 1 lb. cream cheese, softened
• 4 eggs
• 1 c. granulated sugar
• 1 tsp. grated lemon rind
• 4 T. all purpose flour
• ¼ tsp. salt
• 2 T. lemon juice

• CRUST: Thoroughly blend together Zwieback crumbs, sugar, cinnamon and butter. Press mixture firmly against bottom and sides of 9 inch spring form pan.
• FILLING: Add cream gradually to cream cheese; beating until smooth. Add sifted flour and salt; add to cheese mixture, then stir in lemon juice. Pour into crust. Bake in a preheated slow oven (325) 1 ¼ to 1 ½ hour. DO NOT OPEN OVEN DOOR. Cool thoroughly before removing sides of spring form pan.
• Hints: Place shallow pan of water on lower oven rack. Cool in oven. Overnight if necessary. Blend softened butter into crumbs. Use only zest of lemon.
• Optional: If desired, top with canned cherry pie filling.

Marjorie Thoelke raved about this recipe that Hank made after he went to the Fanny Farmer cooking school. Hence the "Henri of Billerica" since he lived in Billerica, Mass.
