6 large baking potatoes
1/2 c. dairy sour cream or cream cheese
3 Tbsp. butter
1 large egg, beaten
1 Tbsp. chopped green onion
3/4 c. Old English or sharp cheddar cheese
salt & pepper to taste
Grated Parmesan cheese

Prick potato skins with fork. Bake at 400º F for approximately 1 hour or until done. Cut a slice lengthwise from top of each potato and carefully scoop out the inside, setting shells to one side. Mash potatoes while hot. Add butter, sour cream or cream cheese, and egg; beat until fluffy. Stir in onions and cheese. Season with salt and pepper. Pile mashed potatoes lightly and high into shells. Sprinkle with Parmesan cheese. Bake at 350º F until brown on top.

These can be prepared up-to point of baking and stored in freezer. To serve, heat them at 350º F for 1 hour. This method is great for large group meals. As I recall, Mom made these for an anniversary dinner she made when they lived in Higginsville in the mid-60's; so I am thinking their 25th wedding anniversary.
