1 c. sugar
2 T. flour
¼ tsp. salt
3 c. dried rhubarb
2 eggs

Directions:
Directions:
• Mix together sugar, flour and salt.
• Add 3 c. rhubarb and cook about 10 minutes.
• Stir in 2 beaten egg yolks.
• Return to heat and cook about 2 minutes stirring constantly
• Cool.
• Cover with soft meringue made of 2 egg whites, ¼ tsp. salt, 4 T sugar and ¼ tsp. lemon extract (or lemon juice)
• Bake in moderate oven until warm
