Ingredients:  
1 1/2 cups corn meal (white or yellow—your preference)
1 1/2 cups boiling water
6 tablespoons butter or margarine
3 egg
1 1/2 cups buttermilk
1 cup all- purpose flour
1/2 teaspoon soda
1 tablespoon sugar (I use about a teaspoon)
1/2 teaspoon salt
2 teaspoons baking powder

Directions:
Directions:
Combine and stir until smooth: corn meal and boiling water
Add and stir until melted: butter or margarine
Cover mixture and cool thoroughly
Beat until light: 3 egg yolks. Add them to the corn meal.
Beat in: buttermilk
Sift before measuring: flour
Resift with: soda, sugar, salt, baking powder. Add sifted ingredients to batter.
Beat until stiff but not dry: egg whites. Fold them into batter. Bake

Dorothy beats the eggs, unseparated, adds the buttermilk, then stirs in the corn meal mixture. She does not pre-sift the flour, but sifts it once with the soda, sugar, salt and baking powder. Stir into the other mixture as smoothly as possible and beat out any remaining lumps with a hand beater
