1 cup corn meal
2 cups scalded milk
3 tablespoons butter
3 eggs
2 teaspoons double acting baking powder
1 teaspoon salt
1 teaspoon sugar

Directions:
Directions:
Stir 1 cup corn meal into 2 cups scalded milk. Add 3 tablespoons butter and beat the mixture until it is smooth. Let cool slightly and beat in the well beaten yolks of 3 eggs.
Combine 2 teaspoons double acting baking powder and 1 teaspoon each of salt and sugar; stir the mixture into the batter. Fold in 3 egg whites, stiffly beaten.
Pour batter into a well greased baking dish and bake the bread in a moderately hot oven (357-degrees) for 30-40 minutes, or until it tests done
