1 cup water
1 cup milk
2 eggs
1/4 sugar
Dash of salt
1 1/2 tsp. vanilla
1 2/3 cup flour

Directions:
Directions:
Combine water and milk with eggs in large bowl. Beat to blend; mix in sugar and salt. Add vanilla and flour and beat until smooth.
In a 10-inch fry pan, pour or brush with a small amount of oil and tilt pan to cover bottom (do this in between every two pancakes). Tilt pan and using 2/3 cup of batter for each pancake, start pouring batter from top to bottom. Cover entire surface by tilting pan in all directions to fill in any gaps. Turn this pancake over after 20 seconds using a long narrow spatula. (You only want pancake to be lightly browned). Cook for 10 seconds. Remove to a plate and sprinkle lightly with sugar (if desired) and roll up. Keep in warm oven if desired until pancakes are done.
To serve, unroll pancake and fill with fresh fruit mixture and whipped cream. Re-roll and drizzle maple syrup over. Can also be filled with apple sauce or eat as is.
