Sweet Potato Bread Pudding Recipe

5 c torn bread
1 sweet potato (yam)
3 eggs
2 c milk
1 c mini marshmallows
1/2 c pecans, chopped
1 tsp pumpkin pie spice
1/2 c sugar
1/4 c brown sugar
2 tsp vanilla extract
Salt - pinch

Vanilla Sauce:

7 oz sweetened condensed milk
1 tsp milk
1 tsp lemon juice
1/2 tsp pumpkin pie spice
1/2 tsp vanilla extract

Rum Sauce:

2T butter
3 T Rum
1 T cornstarch
1/2 c sugar
1 c milk

Directions:
Directions:
1) Preheat oven to 325*
2) Wash, pat dry & poke holes in sweet potato and microwave (approx 15 min)
3) Peel and mash potato until smooth
4) Add eggs - mix well
5) Add sugars, vanilla, spice, & salt - mix well
6) Add marshmallows, nuts (opt), bread, and milk - gently stir together
7) Spray pan w/EVOO
8) Bake for approx 55 min

Sauce:

Whisk all ingredients together - pour over warm bread pudding

Rum Sauce:

1) Melt butter over medium heat
2) Mix sugar & cornstarch - stir into butter
3) Pour in milk, stir frequently until mixture begins to boil
4) Cook until thick
5) Remove from heat - stir in rum - serve warm
