1 store cooked Roaster Chicken
2 stalks of celery, chopped
1/2 c.dried cranberries
1/4 c. red onion, finely chopped
Mayonnaise or Miracle Whip to taste

Directions:
Directions:
Take the skin off the chicken. Remove chicken from the bones. (Save the bones for soup stock!) Dice the chicken and mix in the remaining ingredients. Add salt and pepper if needed. Serve with rolls, croissants or on a bed of lettuce. You can substitute turkey from your Thanksgiving leftovers.
