1 lbs ground beef
dash of Cumin
dash of Cayenne (add more if you like it spicy)
salt and pepper to taste
1- 16oz can kidney beans.

Salad toppings:
Shredded Mexican blend Cheese
Sour Cream
Guacamole
1/2 onions - diced
1-2 Limes - quartered
1-2 tomatoes - diced
1/2 head lettuce lettuce - shredded
Tostitos corn chips, in place of croutons
Additional salt and pepper to taste

In a sauté pan cook ground beef with cumin, cayenne, salt and pepper. Once mostly cooked add one can of Kidney beans, juice and all to the ground meat mixture. While the meat is finishing cooking, prepare your salad toppings. Shred, dice, scoop and quarter as specified in the ingredients list. Place each topping in a separate bowl.

Once the meat is completely cooked, give each person a serving of meat and they can top which whatever salad topping they enjoy.

"I was grieving my husband's death from colon cancer...really grieving. It was a beautiful sunny day, and I was at a local restaurant having a taco at an outside table. A gentleman sat at the table next to me. We had some small talk, and he said, "I don't know if you would be into this but, I go to Hope Chapel up the street and I really like it. It might be good for you." Well I went with my young daughter the next Sunday. I was thanking Pastor Paul for his sermon when the gentleman walked up and said, "Hey didn't I see you at Surf City Taco?" "Yes," I said, and went on to tell Pastor Paul, "This guy did just what he was supposed to do!" And we have been coming ever since!
