12 oz. of Havarti cheese
2 medium carrots, well scrubbed
4 cloves garlic
3-5 T. mayonnaise

Directions:
Directions:
Using a food processor, shred cheese and add to mixing bowl.
Coarsely chop garlic and carrots. Transfer to food processor and pulse
until finely chopped but not pureed. Add to mixing bowl along with 3 T. of mayonnaise, using a fork to stir and mash the mixture. Add some or all of the remaining mayonnaise to bind the spread together.

Cover tightly and refrigerate for two hours. Serve chilled or at room temperature. Great with crackers or crisp veggies.

Funny how just a few ingredients can make something so good. The carrots in this add a mild sweetness that helps to cut the garlic. It is really good....you must try.
