1 8 oz. pkg light cream cheese (Neufchatel) softened.
½ c skim milk
1 10.75 oz. can reduced sodium condensed cream of chicken soup
1 16 oz. pkg frozen/steamed vegetables (ex. broccoli, cauliflower,carrots). 4 c thawed
2 c cubed cooked chicken
1 c quick-cooking brown rice
⅓ c grated Parmesan cheese
¼ tsp pepper
⅛ tsp garlic powder (optional)
1 T toasted wheat germ or crumbled crackers of your choice for topping

Directions:

1. Preheat oven to 350º. Spray 2 quart round casserole with non-stick spray.

2. Place cream cheese in casserole and add milk. Stir in soup till well blended.

3. Add uncooked rice & stir. Add vegetables & chicken, ½ Parm, pepper & garlic

4. Bake covered for 30 minutes. Take out and stir. Sprinkle Parm & topping.

5. Bake uncovered about 20 more minutes or until heated through.
