1-1/2 lbs. lean ground beef
3 T. butter (divided)
2 cans golden mushroom soup, undiluted
1 tsp. salt
1/2 tsp. black pepper
1 cup elbow macaroni
1 cup ricotta cheese
1 pks. (3 oz.) cream cheese
1/2 cup milk
1 T. cider vinegar
1/3 cup chopped green onions (including tops)
1/4 cup coarsely chopped green pepper
1 pkg. (10 oz.) frozen whole kernel corn

Directions:
Directions:
Brown ground beef in 1 T. of the butter in a large skillet. Remove from heat; drain off excess fat. Stir in soup, salt and pepper. Bring to a boil; taste and adjust seasonings if needed.

Meanwhile, cook macaroni according to package direction. Drain. Mix with remaining 2 T. butter; set aside.

Combine ricotta cheese, cream cheese, milk, vinegar, onions and green pepper. Prepare corn as directed on package; drain.

To assemble casserole:
Spread half of meat mixture on bottom of a well-greased 2-1/2 quart shallow casserole. Place macaroni over meat; add corn, reserving about 2 T. for the top. Now spread cheese mixture over corn layer. Cover with remaining meat mixture. Add reserved corn in center of casserole for a decorative touch.

Bake, uncovered in a 350º oven for 30-40 minutes or until heated throughout.
