4 cups water
1 cup Grits (Not Instant)
1 ½ tsp Salt
1 lb. Velveeta Cheese (cut in cubes)
1 lb. sausage cooked & drained
1 15-oz. can Rotel Diced Tomatoes & Chilies

Directions:
Directions:
Bring water to boil and add grits and salt. Cover and cook about 15 minutes on medium to low heat. Stir once or twice during cooking time.
During this time cook and drain your sausage and cut up your cheese. When grits are done, stir in the sausage and cheese and stir until cheese melts. Using a slotted spoon, add the Rotel tomatoes and chilies, reserving the liquid. Stir to blend and add ½ the Rotel liquid stirring slowly. If you feel you need to add more liquid, do so, but you do not want to make it soupy.
Pour into a casserole dish and bake at 350 degrees for 15-20 minutes.
