1 cup boiling water
1 cup 100% Kellogg All Bran
1 ½ cups sugar OR ¾ cup Splenda
½ cup Canola oil
2 eggs
1 pt (2 cups) buttermilk
2 ½ cups whole wheat flour
2 ½ tsp soda
¼ tsp salt
1 cup raisins
1 cup Craisins
1 chopped apple
1 cup chopped pecans (or other nuts)

Directions:

Pour 1 cup boiling water over 1 cup All Bran. Mix sugar or Splenda with ½ cup Canola Oil. Add 2 eggs. Mix and add buttermilk. Stir. Add bran mixture.

Add 2 ½ cups whole wheat flour, 2 ½ tsp soda and ¼ teaspoon salt. Mix. Add, if desired, raisins, Craisins, chopped apples and chopped nuts. Mix well.

Bake in muffin tins (2) at 400 degrees for 20 minutes. Makes 24 muffins.

Can freeze left over muffins. Can double recipe and keep dough in refrigerator for 5 weeks.
