4 eggs, slightly beaten
1/2 cups sugar
1/4 t. salt
1 t. vanilla
1/2 t. almond extract
2 cups milk, scalded
1 9 in. unbaked pastry shell
ground nutmeg (optional)

Directions:
Directions:
Combine eggs, sugar, salt and flavorings; beat until blended. Gradually stir in scalded milk. Pour into pastry shell, sprinkle with nutmeg.
Bake at 400 degrees for 15 minutes; reduce temperature to 350 degrees and bake for 15-20 minutes or until knife inserted in center comes out clean. Cool.
Chill before serving.
