Makes 15, 6" crepes
2 eggs
1 cup milk 2/3 cup all purpose flour
4 1/2 tsp. melted butter
1 tsp. sugar
pinch of salt

melted clarified butter or oil

Lemon Filling
4 egg yolks
1/2 cup sugar
3 Tbl. fresh lemon juice
3 Tbl. freshly grated lemon peel
3/4 cup whipping cream,whipped

Raspberry Sauce
1 10. oz box frozen raspberries,thawed and drained
1/4 cup sugar
4 1/2 tsp. kirsch

Meringue
1 cup sugar
6 Tbl. water
1/4 tp. cream of tartar

2 egg whites
1 tsp. orange liquer

Directions:
For crepes. Combine eggs and milk in medium bowl and blend well. Add flour,melted butter,sugar and salt and beat until smooth and shiny. Cover batter and let stand 2 hours.

Heat 6" crepe pan or skillet over medium heat until drop of water sizzles when dropped in pan. Remove from heat and lightly brush with melted butter or oil. Working quickly,add 2 Tbl. batter to one edge of pan,tilting and swirling until bottom is covered with thin layer of batter.
Return pan to med. high heat and cook crepes until bottom is brown,about 35 seconds. Turn (or flip) crepe over and cook on second side until lightly browned. Slide out onto plate.
Top with sheet of waxed paper. Repeat with remaining batter,stirring occasionally,adjustng heat and brushing pan with more butter, if necessary,
