1 Tbls. light soy sauce
2 tsp. cornstarch
1 tsp. sugar
1 tsp. sherry
1 whole large skinned,deboned and thinly sliced chicken breast
1/2 lb. medium raw prawns(or shrimp) peeled and deveined
4 Tbl. peanut oil
1 large bell pepper,seeded and julienned
1 med. zucchini,julienned
6 dried mushrooms caps,soaked in watere 1 hour and squeezed dry,thinly sliced
1 tsp. sugar
salt


1 pound fresh egg noodles
2 garlic cloves
1 slice fresh ginger,crushed
2 green onions,sliced thin and cut into 1 ' LENGTHS

Sauce Mixture
1 1/2 cups chicken broth
2 Tbls. cornstarch
2 Tbls. oyster sauce
1 1/2 tsp. vinegar
1 tsp. sesame oil

Mix first 4 ingredients in medium bowl.Add chicken and prawns. Toss well and cover. Let stand for 30 min. to 1 hour.
Combine chicken broth,cornstarch,oyster sauce,vinegar and sesame oil in small bowl and blend well. Set aside.

Parboil noodles 2-3 minutes;Rinse,drain and set aside.
Bring another pot of water to boil and keep hot.
Heat 2 Tbl. peanut oil in wok over high heat until very hot. Add red pepper,zucchini and sliced mushrooms and stir fry for 2 min. Sprinkle with sugar and salt.
Remove and set aside.

Pour remaining 2 Tbl. peanut oil into wok; Add garlic and ginger and stir fry until browned. Remove and discard.
Stir in chicken and prawns and cook quickly until almost done. Add reserved sauce mixture and stir constantly until thickened. Return vegetables to wok with green onions and stir fry briefly until well mixed. Keep warm.

Pour noodles into boiling water 10-15 SECONDS to heat through. Drain and transfer to large serving platter. Spoon stir-fry mixture over top and serve.

This recipe is in Faye's writing on paper that says"Connolly's Construction Co", But,considering Chrisit's love of lo mein, Ithought for sure it was hers!
It is dated Feb. 1985. Found it in a folder (with some other CC treasures) that I was getting ready to toss!
