1 c. flour
1/4 c. butter
2/3 c. sugar
1 egg
2 teaspoons vanilla essence
1/3 c. hot water
2 tsp. baking powder
Grated rind of half orange
1 1/2 c.orange juice

Directions:
Directions:
Sift the flour with the baking powder and 1/4 teaspoon salt. Set aside.
In a small bowl cream the butter with the sugar. Beat in the egg.
Blend in 1 teaspoon vanilla essence and the grated orange rind.
Add the flour mixture alternatively with the water, beginning and ending with flour.
Turn batter into a well buttered oven-proof dish and set aside.
Combine orange juice with 1/2 cup sugar and remaining 1 teaspoon of vanilla essence plus 1/4 teaspoon salt. Mix well.
Pour over cake batter and bake in a medium oven – 350 degrees – for approximately 45 minutes
