Great for week-end brunch or family breakfast at Gigi and poppi's house, Christmas morning...

This recipe is for 4 people, but with all other food items for brunch, it will serve 8...

8 eggs....
2 T heavy cream...
1/2 t kosher salt...
1/4 t coarsely ground black pepper...
1 T olive oil...
1/2 cup, fresh corn, off 1 ear of corn...
4 oz. smoked salmon, sliced in strips...
1/2 cup halved, cherry tomatoes...
1 T chopped, fresh dill...

Directions:

In a large skillet, heat the olive oil over medium-low heat...
In a large bowl, mix eggs, cream, salt and pepper...
Once olive oil is heated, add egg mixture, let it set for 1 minute and begin to scramble, gently moving mixture around pan with a spatula, again doing this for 1 minute...
Next add the corn and when mixture is nearly done, add the salmon and tomatoes...
When eggs are firm but soft, remove from pan to plate and top with the chopped dill...serve immediately...
Enjoy!
