Ingredients: 1⁄2 lb dried split green peas 4 -6 cups chicken stock 2 ham hocks 1 bay leaf 1⁄2onion, chopped 2 stalks celery, chopped 1 carrot, chopped 2 garlic cloves, minced 1⁄2 tablespoon oil salt, pepper to taste

Directions:Wash and drain the dried peas. Watch out for tiny rocks in the peas. Cut off the ham from the bones, cube it and set aside. Save bones as they will be used to flavor the stock.
Heat up the oil in a large pot, add the onion, celery, and carrot. Cook over medium heat until softened, about 3-5 minutes. Add the garlic and cook for about 1 minute more.
Add the chicken stock, peas, ham bones, bay leaf, and bring to a boil. Add sautéed vegetable mixture to soup and cook half covered over low heat for about 1 to 1.5 hours stirring occasionally. When you get near the end of cooking, you can add the cubed ham. Add salt and pepper to taste. Delicious split pea soup is now ready!

Notes: In December 2015 my parents lost their home to foreclosure. Leading up to their exit date, 12/31/15, we spent months trying to find a new home for them, but given they are on a fixed income, finding a home which met their humble budget was very difficult. We were three weeks from their exit date and still no home had come. We were all at our wits end. My husband, Tommy, and I came to Pastor Noelani and Ed Jai as well as Pastors Laurie and Jim Walz for prayer. The very next week, God in His perfect mercy, brought a home which perfectly fit my parents budget as well as was on a cul-de-sac. My mother had always dreamed of living on a quiet cul-de-sac.
Once my parents moved, Pastor Noelani and Ed Jai came to bless my parents new home - all the way in Hemet, Ca! As a housewarming gift, the Jais brought a bag of Split Pea Andersen's soup mix along with a cute gift basket. After the house blessing we made the soup. It was the first meal we shared in my parents new home, after the house blessing. HCHB and Split Pea Soup will always hold a special place in my heart. I will forever be grateful for the immense lovingkindness and support which flows from HCHB. But more than that, I am continually blessed by the faith in action I see walked out every day by each member of the pastoral staff. I am blessed beyond measure by the staff, as they repeatedly directed me to the cross. Thank you Pastor Paul and the Hope Chapel pastoral staff!
