Ingredients:
Ingredients:
Chicken broth - I normally use a combination of canned broth and water with boulion cubes
Boneless chicken - diced
Carrots - cut into very small pieces
Tomato Juice - approximately 6-8 ounces
Salt
Ground beef - 1/2 pound
grated cheese - romano
olive oil
minced garlic
onion flakes
noodles

Directions:
Directions:
In large saucepan put a couple tablespoons of olive oil in bottom.
Add minced garlic and onion flakes and lightly brown.
Add chicken broth, water and boullion.
Add diced chicken, diced carrrots
Add lots of salt
Simmer on low while rolling meatballs.

Meatballs: mix 1/2 pound ground beef with 1/4 cup of bread crumbs. Roll into mini meatballs. Meatballs can be put into soup raw or if you want soup done sooner place them on a baking sheet and bake in 375 degree oven for 15 min.

Add meatballs to soup and add tomato juice. Cook on low or medium heat for at least an hour.

Boil noodles (I like a small pastina or elbow). I prefer took keep noodles separate and when ready to eat run some hot water on them and add them to soup bowl. They can be put right into soup but they soak up a lot of the broth.

On second day I usually add more chicken broth or water and bouillion cubes.
