8 oz uncooked spiral pasta
8 oz sausage (cut in 1/4 inch slices)
2 medium sweet potatoes (peeled and cut into 1/2 inch cubes)
1 cup chopped green pepper
1/2 cup chopped onion
2 T olive oil
1 tsp minced garlic
1 can diced tomatoes, undrained (14 1/2oz)
1 cup heavy whipping cream
1/4 tsp salt
1/4 tsp pepper
1 cup shredded cheddar cheese

Directions:
Directions:
Cook pasta according to package directions. Meanwhile, in a large skillet, cook the sausage, sweet potato, green pepper, and onion in oil over medium heat for 5 minutes or until veggies are tender. Add garlic, cook 1 minute longer. Drain.

Add the tomatoes, cream, salt, and pepper. Bring to a boil; remove from the heat. Drain pasta; stir into sausage mixture. Transfer to a greased 13x9 in baking dish. Sprinkle with cheese.

Bake, uncovered, at 350º for 25-30 minutes, or until bubble. Let stand for 5 minutes before serving.
