1 pound uncooked ziti or mostaccioli
1 pound Italian sausage, casings removed
1 cup chopped onion
3 cloves garlic, pressed
1 jar (26-28 ounce) Spaghetti sauce
1 jar (15 ounce) Spaghetti sauce
1 can (14.5 ounce) diced tomatoes, undrained
2 (15 ounce) containers ricotta cheese
2 eggs, slightly beaten
1 tablespoon Italian seasoning
½ teaspoon freshly ground pepper
2 cups shredded mozzarella cheese
½ cup grated parmesan cheese (fresh grated is best)

Directions:
Directions:
Preheat oven to 350 degrees. Cook ziti according to package directions; drain and set aside. In a 12" skillet, cook sausage, onion and garlic over medium-high heat until sausage is browned, breaking into small pieces.
Remove from heat and drain if necessary. Stir in spaghetti sauce and tomatoes; set aside. In separate bowl combine Ricotta cheese, eggs, Italian seasoning and black pepper, mix well. Place cooked ziti in large baking dish. Add 4 cups of the sauce mixture; mix well. Spoon the Ricotta mixture evenly over ziti; spread over ziti. Top with remaining sauce mixture. Bake 45 minutes. Top with mozzarella and parmesan cheeses. Bake 15-20 minutes or until bubbly and cheeses are melted.
