2.4/5 pounds boned, rolled rib roast
2 tablespoons olive oil
2 tablespoons Port or red wine vinegar
½ teaspoon onion salt
1 teaspoon dried thyme
1 teaspoon dried marjoram
½ teaspoon dried rosemary
½ teaspoon salt
¼ teaspoon garlic granules
freshly ground pepper
(fresh herbs are better used if you can get them)

Directions:

1. Combine the olive oil, wine vinegar, onion salt, thyme, marjoram, rosemary, salt, garlic granules and pepper in a large plastic bag.
2. Add the beef to the bag and turn to coat evenly. Seal the bag and chill the beef for 8-10 hours.
3. Preheat oven to 325 degrees. Calculate the cooking time for your piece of beef. Allow 25 minutes per pound, plus another 25 minutes.
4. Wrap the beef in foil and place in a roasting pan. Roast the beef for 1 hour. Unwrap and continue to roast for another 1½ hour.
5. Remove the beef from the oven, cover and allow to rest in a warm place for 30 minutes and serve.
