2-3 lbs Pork, Cubed
6 Fresh roasted Hatch Chilies, diced
1 Small can diced green chilies
1 Large Onion, diced
6 Cloves Garlic, minced
1 Large can Green Enchilada Sauce
Water
Flour
Olive Oil

Directions:
Directions:
Lightly flour pork. Put small amount of oil in pan. Saute onions and garlic until translucent, add pork. Continue to cook until meat is no longer pink. You can move this to a large soup pot or do in a slow cooker. Add all other ingredients and mix well. If to thick add a little bit of water. Cook on low for 4 hours.

Serve with warm flour tortillas and cheese.
