2-3/4 to 3-1/4 C Un-sifted Flour
1/7 C Sugar
1 t Salt
1 pkg Dry Yeast
1/3 C Milk
1/3 C Water
2 T Butter
2 Eggs at room temperature


GLAZE

1 stick Butter
1 C Sugar
1 t Flour


COTTAGE CHEESE FILLING

1 pt. Cottage cheese, drained (put in a cheese cloth
& hang to dry. Squeeze moisture if needed )
8 oz. Cream Cheese, softened
1 Egg Yolk
1/2 C Sugar
2 t Lemon Juice
Grated lemon rind from 1 lemon
Pinch of salt

In a large bowl, thoroughly mix 1 cup flour, sugar, salt and undissolved yeast. Combine milk, water and butter in a saucepan. Heat over low heat until liquids are warm (not hot...it will kill the yeast). Gradually add liquids to dry ingredients and beat for 2 minutes at medium speed with electric mixer, scraping bowl occasionally. Add eggs and 1/2 cup flour, or enough flour to make a thick batter. Beat batter at high speed for 2-3 minutes, occasionally scraping the bowl. Stir in enough additional flour to make a soft dough. Turn out onto lightly floured board and knead until smooth and elastic, or for about 8-10 minutes. Place in buttered bowl, turning to grease the top. Cover and let rise in a warm place, free from drafts, until doubled in bulk (about and hour). Punch dough down and turn out onto lightly floured board. Roll out to about 1/2" thickness. Cut circles with a 2-1/2" biscuit cutter. Place about 2" apart on greased baking sheets and cover with a damp towel. Let rise until doubled in bulk in a warm, draft free area (about an hour).

Press an indentation in the center of each bun, leaving a rim about 1/4" wide. Fill with preferred fillings and bake in preheated 400º oven for about 10 minutes or until lightly browned.


Cottage Cheese Filling: Mix all ingredients together by hand until well blended.

Glaze: Beat all ingredients until thick. Brush on hot kolaches.



If using dried fruit, ie. prunes, peaches, apricots, soak overnight. Chop fruit and put into a saucepan. Add desired amount of sugar, barely cover with water, and cook over low heat until fruit is soft, stirring often.

I must have watched my grandmother make thousands of these, along with strudel, donuts and bread. She wasn't much for store bought bread or pastries.
