5 lb New potatoes with jackets on
1 English cucumber - unpeeled, cut in half lengthwise and then cut into 1/4" slices
2 Bunches Radishes - trimmed and cut into 1/4' slices
1 Head Celery - trimmed and cut into 1/4" pieces
2 C Mayonaise
1 1/2 T Lemon Juice
1t Salt
1t Pepper - freshly ground

Directions:
Directions:
1. Boil potatoes in salted water until fork tender. Let cool.
2. Cut potatoes into bite size pieces, add all of the ingredients and mix well.

This recipe came from a teaching colleague in 1980. It works really well if you have a chance to let the salad sit for 1/2 day to let the flavours mix.
